We ferment our sourdough for 48 hours, laminate croissants by hand, and build custom cakes for Asheville weddings and birthdays. Everything is baked the morning you buy it — and when it's gone, it's gone.
What we bake
We keep the menu short so the quality stays high. Bread and pastry come out at 7:30 and 8:00 each morning; cakes are made to order.

Marisol trained at the Asheville-Buncombe Technical Community College culinary programme, spent four years on the bench at a Charleston bread bakery, and opened Crumb & Kiln in a former tyre shop on Haywood Road in the spring of 2016.
She mills part of the whole-grain blend in-house and buys the rest from Carolina Ground, the stone mill in Hendersonville that buys wheat from Southeastern farms. Nothing on the shelf contains a dough conditioner or a commercial yeast packet.
“A 48-hour ferment is not a marketing line. It is two extra days of rent, two extra days of fridge space, and the only way to get that flavour.”
Marisol Vega, owner & head baker

Best sourdough I've found in Asheville and I have tried all of them. Get there before nine on a Saturday or you are buying rye.Dana R. · Google review

They made our wedding cake in September. Three tiers, brown butter and fig, and they matched the colour of the invitations exactly.Priya & Tom K. · Google review

The gluten-free chocolate cake is genuinely good, not "good for gluten-free". Only complaint is that it's Wednesdays and Saturdays only.Michael T. · Google review
